Tuna patties

This has been a staple in my family for years.

A dinner dish, a left over for school lunches, a reheated afternoon snack.

They're not the prettiest looking things, but they're tasty and homely.

My sister and mum make these too, and we all have our own slightly different versions.

I'll show my version here, but make sure you read the notes so you can see some other ways to enjoy these.

You could actually eat quite a few of these as a main dish alongside a salad. But they're also perfect for lunchbox snacks, or even reheated for breakfast and served with eggs!


Prep time: 10 mins

Cooking time: 30 mins

Serves: 4


Ingredients


4 large potatoes or 6 medium, cubed

1 bunch of chives, chopped

3 tsp capers, chopped

1 tin of tuna, drained and flaked

2 anchovies

2 tbsp olive oil

Salt and pepper to taste


Method

  1. Cut up the potatoes, and cook them in salted water.

  2. While the potatoes are boiling, mix the rest of the ingredients together until evenly combined.

  3. Drain the potatoes, and add them to the rest of the ingredients, mix, then mash all together.

  4. Taste and season to your liking. Let it rest until its cool enough to handle.

  5. Once the patty mash has cooled down, roll the mixture into balls the size of golf balls, then press down to make a patty.

  6. In a separate bowl, crack the two eggs and whisk them with a pinch of salt.

  7. Heat the oil in a fry pay, evenly coat each patty with egg then fry on each side until browned.

  8. Serve with a side of your choosing.


Notes


  • If you don't have chives, you can also use spring onions or shallots. Both work really well.

  • I know not everyone likes anchovies so this is of course optional. It DOES really add to the flavor though so I encourage using it.

  • These are normally much more crispy and covered in breadcrumbs, it was me who changed it for an egg coating instead. If you are normal (hah!) before cooking them in the pan, coat each patty in a light film of flour, dip into the egg mixture then coat in breadcrumbs before frying. Add more oil too so you get a crispy golden crust.

  • To add an extra kick in them, you can include chili flakes, chopped olives and/or lemon zest into the mixture before rolling them into patties.
