Curry stir fry noodles with prawn
To be honest, this is basically how you make Singapore Noodles too. But considering I didnt have two key ingredients - pork char siew or Chinese cooking wine, there was no way I could claim it as that.

Instead I substituted the Chinese cooking wine with mirin, and the port with diced ham. It's still super yummy packed with flavor.

Ingredients
1/2 white onion, sliced
2 cloves of garlic, crushed
2cm fresh ginger, finely chopped
1/2 large red capsicum, sliced
1 egg, beaten
60g ham, diced
8 large prawns, sliced half lengthways
120g dried vermicelli noodles
1/2 tsp salt
1 tbsp olive oil
olive oil spray
Sauce
2 tbsp soy sauce
2 tbsp mirin
1/2 tsp sugar
3 tsp curry powder
1 tsp white pepper
Method
Mix all the sauce ingredients into a jar, shake, then set aside.
Crack the egg into a bowl and whisk. Heat a fry pan and spray with olive oil spray, before pouring the egg in and spreading it so its like a thin crepe. Flip, then take off the heat and set aside.
Once the egg has cooled, roll it up then slice so you end up with ribbons of egg.
In the same fry pan, spray another light film of olive oil, and add your prawns. Season with salt and toss until just cooked. Remove from the heat and set aside.
Prep your onions, garlic and ginger. Pour the olive oil in and sautée the onions, garlic and ginger in, until the onion starts to become soft.
Once the onion softens, add in the sliced capsicum.
While the capsicum softens, bring water to the boil in a separate saucepan and cook your vermicelli noodles. This should only take a few minute, and once cooked, drain, and set aside.
When the capsicum has softened, add the noodles and the sauce mixture, ensuring everything is evenly mixed.
Once mixed, add in the egg strips, the prawns and the diced ham.
Place the flame on high to get a nice hot heat and a little char, then remove and serve hot.
Notes
Mirin can be sweet, so the sugar is optional.
Add chili flakes at the same time as the sauce if you want some heat to your dish.
Any protein would be nice if you dont like prawns or egg.
Toast sesame seeds to scatter on top for little pops of texture.
