Tomato soup
Yep, this ones a classic. I'm sure everyone has their version of it, and this one's mine. I don't add cream to it, and I don't add capsicum. I like the pure tomato taste with basil.
My mum makes me this soup when she finds a nice bunch of ripe tomatoes but seeing as I dont see her everyday, I make my own which is the next best thing.

I roast the tomatoes in an air fryer just because I dont have an oven, so if you have an oven use that, its fine. And if you want to blend your soup in a blender, thats fine too, just make sure you pour it in small batches and once the soup has cooled down to avoid the soup splattering your kitchen and looking like a murder scene.

Serves: 2
Ingredients
5 ripe tomatoes
1 head of garlic
1/2 red onion
1 handful of basil
1 tsp dried thyme
1 tbsp olive oil
250ml vegetable stock
Salt and pepper to taste
Method
Slice your tomatoes in half, quarter your onion, and cut your garlic in half horizontally.
Place tomatoes, onion and garlic into your air fryer, sprinkle with salt, pepper and thyme, drizzle with the olive oil then set on 200 degrees celsius for 10 minutes.
Once the vegetables are cooked, transfer to a sauce pan, add in the stock and 3/4 of the basil, and bring to a low boil for 10 minutes.
Once combined, take off the heat, add the remaining basil, and blend.

Notes
If you do want to add cream, add after blending.
If you want to add capsicum or other vegetables, roast them in the beginning with the tomatoes.
Chili flakes at the end add a nice bit of heat.
