Crispy chicken tenders

I kind of invented this one as I went along, just thinking of flavors I liked together, and wow, it turned out sooo yummy. Super crispy on the outside, and so juicy on the inside.

I kinnnda feel like it has a KFC flavor to it in a way, but it doesn't make you feel bloated afterwards!

I ate mine with a salad and dipped my tenders in Franks Hot Sauce, but you could do other things with it too. Slice them up across and lay it over a mound of rice, Katsu style, or smear some napolitana sauce on top and sprinkle with cheese before grilling the top, a sort of mini Parmigiana!

Ingredients


6 chicken tenderloins

1.5 tsp garlic powder

1.5 tsp paprika powder

1 tsp salt

Cracked black pepper

2 eggs

1 tbsp American mustard

1/2 cup parsley, finely chopped

1/2 cup breadcrumbs

1/2 cup plain flour

Olive oil spray


Method

  1. Finely chop your parsley then mix with the breadcrumbs and place on a plate or in a shallow bowl.

  2. Crack your eggs into a bowl, add the mustard and whisk until combined.

  3. Pour the flour onto a plate or shallow bowl.

  4. Lay your chicken tenders on a chopping board and season both sides evenly with the paprika, garlic powder, salt and pepper.

  5. Take one tender, and pat into the flour, coating evenly but not thickly. Dust off any excess.

  6. Next, dip the flour coated tender into the egg mixture, coating all sides evenly.

  7. Finally, press the egg coated tender into the breadcrumb mix, ensuring all parts of the chicken are coated.

  8. Repeat steps 5-7 for all your pieces of chicken.

  9. Spray the olive oil on the base of your air fryer (or tray if you're using an oven) and place the chicken tenders on top, spraying the tops of the chicken with olive oil too.

  10. Cook at 190 degrees Celsius for 12 minutes, turning the chicken half way and spraying them once more with the oil.

  11. Serve with your side of choice.


Notes


  • These would be really great to put into wraps with salad if you dont have time to sit and eat, and prefer something on the go.

  • You can also use chicken breast or thigh, just make sure you cut into even slices so they cook all together.

  • Cut your tenders into 2cm pieces before starting the recipe if you want to make "popcorn" chicken.
