Spicy basil chicken with egg

Another day, another time spent in the kitchen combining all the produce my belly was craving and hoping it turned out okay. I'm normally limited by what I have in the fridge so I need to make do with what I have. Unless I'm inviting people over for a dinner party, I'd rather get creative and reduce waste by cooking things with items I already have.

This is great for a midweek lunch, or if you make it in large enough portions, you can pack them up into Tupperware and have ready to go meals whenever you want. Two minutes in the microwave and it's good to go!


Prep time: 10 mins

Cooking time: 15 mins

Serves: 4


Ingredients

2 cups rice

4 cups of water

250g chicken mince

1 spring onion, finely chopped

2cm ginger, sliced

1 clove of garlic, finely chopped

1 zucchini, diced into small cubles

1/4 cup basil, finely sliced

1 Birdseye chilli, finely chopped

1 tsp white pepper

1 tsp salt

2 tsp oyster sauce

1 tbsp soy sauce

1 tbsp olive oil

olive oil spray

1 tsp chili oil

4 small eggs

2 tsp sesame oil

2 tsp chives, finely chopped


Method

  1. Wash your rice by mixing it with water and pouring the water out repetitively until the water being poured out is clear. Season with some salt and cook.

  2. Chop your spring onion, garlic, ginger, and zucchini.

  3. Pour 1 tbsp of olive oil into a hot fry pan and sautéed off the ginger and spring onion until fragrant, then add the zucchini.

  4. Season with white pepper and salt, then add in the chicken, breaking it up and cooking it until it becomes small pieces.

  5. As soon as it's mostly cooked, add in the oyster sauce and oyster sauce until well combined.

  6. Finally add the basil and chili, stirring then removing from the heat when the basil has wilted.

  7. In a separate fry pan, spray with olive oil and add in the chilli oil.

  8. Break in the eggs, season, and cover so that the steam cooks the yolks to your liking.

  9. Spoon the cooked rice into a bowl, place the chicken mixture on top, then top with the fried egg. Drizzle with sesame oil and sprinkle with chives.


Notes

  • Really delicious with mince beef too.

  • Cut up some baby spinach and add it in with the basil for more greens.

  • Just as delicious without rice, but not as filling.

  • Egg is totally optional
