Ham and basil chicken with mozzarella

If you want a quick but tasty lunch, here it is.

It keeps you full, its packed with flavor and literally takes 15 minutes to make.

It's super versatile too so you can add or change different ingredients depending on what you feel like.


Prep time: 5mins

Cooking time: 10 mins

Serves: 2


Ingredients


200g chicken breast, beaten thin

40g shredded mozzarella

40g ham

6 large basil leaves

1 tsp garlic powder

1 tsp paprika

1 tsp dried oregano

Salt and pepper to taste

Olive oil spray


Method

  1. Beat your chicken breasts until they're thin enough to roll up.

  2. Season all sides with the garlic powder, paprika, oregano and salt and pepper.

  3. Divide the ham, and lay it out evenly on top of the chicken.

  4. Place the basil leaves on top, followed by the mozzarella cheese.

  5. Roll them all together until it comes together in a neat mound.

  6. Spray olive oil in an oven proof container, and place the stuffed chicken rolls inside, spraying the top of the chicken with olive oil too.

  7. Place in the air fryer for 10 minutes on 180 degrees Celsius.

  8. Serve with mashed potato, vegetables, or salad.


Notes

  • You may need to adjust the cooking time depending on how thin or thick your chicken is.

  • Other ingredients that would be delicious stuffed into it: chopped olives, semi dried tomatoes, sautéed spinach, pesto or nepolitana sauce.

  • You can also top with parmesan or breadcrumbs if you want an extra crunch.
