Avocado and smoked salmon potato crepes

Don't ask me where this idea came from - I literally have no idea. I just woke up feeling like it and added ingredients to it along the way.

It's the perfect breakfast before a big day, especially for me when I have to leave the house for a huge day of event work and often dont have time to take a break.

Theres soft bits, crispy bits, and creamy bits. It takes a little time to wait for the potatoes to cook but its delicious in the end.


Prep time: 30 mins

Cooking time: 15 mins

Serves: 1


Ingredients


1 large potato, peeled and grated

2 tbsp chives, finely chopped

1 tbsp nutritional yeast

1/2 tbsp sesame seeds

1 tsp garlic powder

1 tsp salt

1/2 tsp black pepper

2 tbsp avacado

75g smoked salmon

1/2 lemon zest

2 tsp capers, roughly chopped

Olive oil spray


Method

  1. Grate your peeled potato, then place in a bowl of icy cold water for 20 minutes.

  2. Once 20 minutes is up, pour out the water, then place the potatoes in a tea towel, holding it like a sack, and squeezing as much excess fluid as you can.

  3. Place the potato in a new bowl and add the sesame seeds, salt, pepper, chopped chives, nutritional yeast and garlic powder. Mix well.

  4. On a large fry pan, spray with olive oil, then pour in the potato mixture, pressing it down so it's evenly thin and reaches all edges of the pan.

  5. Keep the flame on low, and cook for about 8 minutes on one side (or until browned) before flipping and repeating on the other side.

  6. In a separate small fry pan, fry your chopped capers in 1 tbsp olive oil until crispy, then place on a paper towel to remove any excess oil.

  7. Once your potato "crepe" is ready, place on a board and top with the avacado, spreading it evenly on one side and seasoning to taste. Top with the lemon zest, salmon, and sprinkle with the crispy fried capers.

  8. Fold the side without the toppings over, and enjoy!


Notes

  • If you find you have quite watery potatoes, you can bind your mixture by mixing in a tablespoon of corn starch or binding it all together with an egg.

  • Throw in some dollops of creme fraiche if you have it, would be delish!

  • Mash your avacado for easier spreading
