Green broccoli and sausage pasta

If you're feeling like comfort food but also kinda want to get some nutrients in, try this recipe.

I've had a long-term love affair with pasta, particularly the broccoli and sausage pasta. I can literally eat bowl after bowl of the stuff.

But I had some kale in my fridge that needed using so I decided to add it in for some extra goodness and it tastes delicious!

Of course you don't need to add the kale, and other versions of this pasta actually have you dissolving some anchovies in the olive oil with the onions for extra saltiness but totally up to you.

Serves: 2


Ingredients


180g pasta of your choice

2 cups kale, roughly chopped

1 large head of broccoli, cut into small florets

1 Italian sausage, casing removed

2 cloves of garlic, crushed

1/2 white onion, diced

1 tsp dried oregano

1/4 cup grated parmesan

1/4 cup vegetable stock

1 pinch of chili flakes

1 tbsp olive oil

Salt and pepper to taste


Method

  1. Remove the hard spine from the kale, and loosely chop the leafy parts. Boil in salted water until soft, then drain.

  2. Add your kale into a vessel where you can blend it with the parmesan cheese and just enough of the vegetable stock that it becomes smooth, but not too liquid. More like a paste. Set aside.

  3. Dice your onion, then sautée with the olive oil and a pinch of salt until it becomes soft.

  4. While this is sautéing, place your pasta into salted water and boil as per packet instructions.

  5. Slice open the casing of the sausage and put the insides into the saucepan, breaking up the sausage meat until it becomes more of a mince.

  6. Rinse your broccoli and cut until you have bite size florets. Add this to the saucepan with the crushed garlic.

  7. Once the broccoli has cooked for about 8 minutes, add in the kale paste and mix well.

  8. Pour in a ladle of the pasta water to combine all ingredients properly, then just before the pasta becomes aldente, drain the water out and add the pasta to the saucepan, finishing the cooking process in there.

  9. Serve the pasta with parmesan cheese and chili flakes.


Notes

  • Use two sausages if you want more meat to broccoli ratio.

  • You can also use spinach if you can't find any kale.

  • Orecchiette is the best pasta for this dish, I couldn't find any so if you do, use that!
