Cheeseburger spring rolls
Okay so this is a super naughty snack but it's worth every bite.
Basically a cheese burger in bite size pieces with crispy outsides and gooey center.
Make a whole batch and watch them disappear in literal seconds!

Use proper wonton wrappers to make these. I only had the filo type on hand, which is why they were quite delicate and broke/split easily. Getting the thicker stretchy wonton wrappers will ensure all the goodness is wrapped up and held in.

Serves: 4 (3 rolls each)
Ingredients
12 wonton wrappers
200g lean ground beef
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 white onion, finely chopped
3 gherkins, finely chopped
4 slices hamburger cheese
30g shredded mozzarella
1 tbs American mustard
Olive oil spray
Ketchup to serve
Method
Mix your beef with the onion powder, garlic powder and salt until well combined, then shape them into balls, about the size of lemons.
Spray a heated frypan with olive oil, and smash the beef balls down to create disks. Grill on each side until well done and slightly charred. Set aside.
Chop your onion and gherkins and place in a bowl. Mix in the cheeses and mustard.
Once the burger patties have cooled, chop them up finely then mix them in with the rest of the ingredients. Mix well.
Lay your wrappers out and place a dollop onto the wrapper before rolling them up, ensuring there are no gaps for the mixture to come out.
Spray with olive oil and place in the air fryer for 10 minutes at 200 degrees Celsius. If you feel they need longer, extend as needed.
Serve with ketchup for the full burger flavour!
Notes
Dont sautée the mince. It only makes it watery and will destroy the whole mixture. Cooking it as patties ensures maximum dryness. Don't worry, the cheese, onion and mustard keep the mixture juicy.
Gherkins are totally optional. Not everyone like pickles in their burgers.
You can also add ketchup to the mix before cooking if you like.
Deep frying is another cooking option and works just as well.
