Smashed baby potatoes

This one is more of a snack, but suchhhh a good snack. You can be totally creative with your seasoning too, but I feel this one is a pretty good mix and most people would enjoy it.

I don't have an oven, so I've crisped mine up in the air fryer. But if you do have an oven, just use that. You can fit more in at once, and can even do bigger sized potatoes, although the baby ones make for good finger size bites and get crispier faster.


Prep time: 5 mins

Cooking time: 45 mins

Serves: 2


Ingredients


2 cups baby potatoes

1 tsp salt

1/2 tsp paprika powder

1/2 tsp dried rosemary

1/2 tsp dried oregano

1/2 tsp onion powder

chili flakes to taste

Olive oil spray


Method

  1. Rinse your baby potatoes under running water, then place them in a saucepan with salted water. Bring to the boil until cooked.

  2. In a separate bowl, combine all the dry ingredients together until evenly mixed.

  3. Once the potatoes are cooked, drain and leave to cool off until you're able to handle them without burning your fingers.

  4. With a fork, press the backside of it against each potato, crushing them down flat.

  5. Spray all the flattened potatoes with olive oil spray and sprinkle on the dry mixture you made earlier. Turn the potatoes over and repeat.

  6. Place each potato on the bottom of the air fryer tray, making sure they dont overlap. You may have to do this in several batches, depending on how many potatoes you have and the size of your air fryer. If you're doing it in the oven, all of them should fit.

  7. Turn your air fryer onto 200 degrees Celsius for 20 minutes and let the potatoes cook, flipping half way to ensure even crisp. Depending on your oven or air fryer it may need more or less time so just keep an eye on it.

  8. Serve with your choice of dipping sauce, or as is!


Notes


  • If you have a cooking brush, you can combine your dry mix with about 3 tablespoons of olive oil and create a paste rather than a dry sprinkle. Brush it onto your smashed potatoes before putting them in the air fryer. This way you can combine other ingredients such as garlic, fresh parsley or other herbs without the risk of burning them.

  • If you like cheese, you can grate parmesan into the dry mix or top the potatoes with it after you take the out of the air fryer.

  • They're perfectly fine as they are when they come out of the airfryer, but if you want to dip them into a sauce, a marinara sauce, salsa verde, ranch sauce or even just Franks Hot Sauce work well.
