Mini pizza pockets
These are so so so yummy!!!
Everyone loves pizza, and these are just like little cute crispy versions of them.
Perfect to serve if you have friends around or, eat them all in one go by yourself like I did haha!

I just mixed up the ingredients based on what I like on my own pizzas, but you can mix in whatever you like, provided they aren't too wet. If you add things like artichokes, pineapple, or grilled mushrooms, just make sure you pat them dry first to reduce the amount of moisture they have otherwise your pockets will end up soggy

Cooking time: 5 mins
Serves: 8 pockets
Ingredients
8 wonton skins
1/4 cup pizza base sauce
4 cherry tomatoes, sliced
5 olives, sliced
20g ham, diced
4 basil leaves, finely chopped
120g shredded mozzarella
1 tsp grated parmesan
Olive oil spray
Method
Prep all your ingredients to make for easy assembly by slicing your cherry tomatoes, olives, basil and ham.
Place your wonton wrappers on a board, and put 1/2 a teaspoon of pizza base sauce in the center.
Put your desired ingredients on top, then add about 5g of mozzarella.
Wet all the edges of the wonton wrapper, then bring each corner to the center sealing it with the other corners making an airtight square.
Spray both sides with olive oil spray then sprinkle the parmesan on the top side of the pockets.
Place in the air fryer at 200 degrees Celsius for 5 minutes.
Serve with the remaining pizza sauce to dip the pockets in.
Notes
If you want them browner or crispier, you can pan fry them on the stove.
Add chili flakes inside the pockets before closing if you want them spicy.
