Fluffy banana pancakes
These are the real deal.
Super fluffy and bouncy. Not too sweet. Perfect with any topping. You'll probably have noticed I don't post many sweet recipes. It's because I don't really crave sweet food.
(I'm a sucker for fried crispy things though).... But I LOVE these pancakes because they hit the spot without making you feel sick afterwards.

Feel free to add extra ingredients into the batter such as a pinch of cinnamon or chocolate chips. But being a purist with most things, I feel these are perfect as is!

Cooking time: 10 mins
Serves: 4 pancakes
Ingredients
3/4 cup plain flour
1 1/4 tsp baking powder
1 tbsp palm sugar
1 banana
1 egg
1/2 cup milk
1 pinch of salt
Olive oil spray
Method
Sift together the flour, baking powder, sugar and salt into a bowl then set aside.
Mash the banana in another bowl until it looks like a porridge and add in the cracked egg and milk. Whisk together.
Add the dry ingredients to the wet, and combine, making sure not to over mix it, leaving it bubbly and fluid.
Heat a fry pan on low, and spray with olive oil.
Spoon in a ladleful of batter, and let it cook until you see bubbles popping on the surface. Flip, and cook for another few minutes.
Serve with syrup, fruit, or anything you like.
Notes
For even pancakes, use an ice cream scoop to pour in the batter.
Careful not to leave the pan for too long, the sugars in the banana and extra sugar added can burn fast.
I used palm sugar because I like the taste of it with the banana, but you can use any sugar, or omit it completely.
