Other delicious ingredients you could use for these are smoked salmon, smashed avocado, grilled sausage meat, you can even do sweet ones with bananas, berries, Nutella, honey...the list goes on.

Ingredients
1/2 cup spinach, roughly chopped
1 egg, whisked
20g mozzarella
1 slice of ham
1 tortilla wrap
Franks Hot Sauce (optional)
Salt and pepper to taste
Olive oil spray
Method
First prepare your ingredients. Spray some oil in a fry pan and sautée your spinach, seasoning it with salt and pepper. Once wilted, set aside.
Next pour your whisked egg in the same fry pan and scramble to your desired doneness, seasoning before also setting aside.
Place a tortilla wrap on a chopping board, and slice a line from the center straight down.
Divide your ingredients into quadrants, so that you have your egg, spinach, cheese and ham taking up a different corner of the wrap.
If you like a little heat, add some hot sauce onto the eggs.
Fold the tortilla up from the right side of the cut in the tortilla, so that it covers the ingredient above it, then fold left, to cover the next ingredient, before finally folding down to cover the last ingredient. You should have a pocket easy to hold.
Spray the frypan once more and grill on each side before serving.
Notes
Remember to season each ingredient separately so all corners are delicious when combined.
You can add smashed avocado on top, or like me, add more hot sauce.
